There’s something so yummy about cookies, as opposed to a normal biscuit. I think it’s the combination of crisp bite, but a squidgy centre. My kids are always asking me to buy them when we go shopping, so I thought it was about time we tried making them instead, and it was so easy! I don’t think they’re going to last long, so I think we’ll be baking these squidgy choc chunk cookies quite regularly!

- 150 g salted butter softened
- 80 g light brown muscovado sugar
- 80 g granulated sugar
- 2 tsp vanilla extract
- 1 large egg
- 225 g plain flour
- 0.5 tsp bicarbonate of soda
- 1 pinch salt
- 200 g chocolate chunks (we used a mixture of plain and white chocolate)
Ingredients

- Turn on the oven and set it to 170C/Gas mark 5. Line two large baking sheets with non-stick paper.
- Cut the butter into smaller chunks and add it to a bowl with both sugars. Beat until mixed and creamy.
- Add the vanilla essence and the egg. Beat thoroughly.
- Pass the flour, and bicarbonate of soda through a seive into the bowl. Add a pinch of salt. Mix well.
- Leave on the tray for a few minutes before transferring to a wire rack to cool. The cookies will firm up a little as they cool, but will still be soft in the middle.
This amount of dough makes around 28 cookies around 5cm in diameter. You could make fewer, larger cookies if you want.
We found this recipe contained a LOT of chocolate - you could reduce the amount of chunks used if you like more cookie in your choc chunks!
